The recipe looks simple; the result tastes delicious. The PT crew steep the tastiest fresh strawberries they can find along with young ginger and hibiscus flowers in a batch of Sydney Dry Gin. These ingredients impart their bright, lifted flavours and aromas and create the Gin’s beautiful pink hue. Then, the late addition of intensified cardamom and cubeb (or “Java”) pepper distillates helps to elevate the delicate sweetness of the strawberry. Unlike many flavoured Gins, this is bone-dry—no sugar is added. It’s best mixed in a G&T, makes a cracking Rosé Negroni and an even better Strawberry Gin Martini.
