Tasted with only water the liquid transforms immediately from crystal clear to milky white and reveals
a deep, complex perfume with top-notes of lavender, menthol and lemon, and undertones of woodsy fennel. The palate is as intense and zesty as the nose suggests, with the high level of anise in the bill adding sweet liquorice notes that inter- mingle with blackcurrant jube and sappy, herbal characters from the wormwood and fennel. The finish is long, bright and juicy. We think it’s Australia’s best blanche Absinthe, but moreover, it’s a superb example of the genre.
