The Joadja Distillery is located in the Southern Highlands of NSW, set in the picturesque and historic town of Joadja. The distillery lies amongst the abandoned ruins of an 1870's kerosene and shale mining town. It is this rich history, combined with Scottish influence and the distilling of 'sly grog' that has influenced the Jimenez's in the creation of their Single Malt Whisky.
The site is self-sufficient, using the barley grown on site and water from the local, pristine spring. The Jimenez's also are influenced by their own Spanish history, and have used ex-Pedro Ximenez casks from the south of Spain to impart some of their own personal experiences into their carefully crafted whiskies.
The distillery has also crafted their very own dry gin, dark rum, and a selection of quality liqueurs and fortified wines.
